The classic Berlin cuisine is based primarily on the Prussian-bourgeois tradition of the 19th century. Old-fashioned dishes include Liver Berlin style with roasted apple slices, onion rings and mashed potatoes, cured leg of pork with pea puree, Kasseler with sauerkraut and mashed potatoes and pea soup. Since the second half of the twentieth century, however, curry sausage and the kebab are also part of the culinary tradition of Berlin.
